Chazal do not discourage eating meat. But they do recommend restraint; that it should be subject to certain limitations.

Additionally, in 16:8, Rashi brings that bread should be eaten to satiation, but not meat. I don't recall seeing that they find anything wrong with eating eggs, or fish, this seems to be directed specifically at meat.
I can think of three explanations for this recommended regulation; that eating meat can be intemperate (in the sense of self-indulgence,) profligate (an unnecessary expense,) and soporific (that it dulls the mind into lethargy.)
The distaste for the self indulgence of excessive carnivory is evident in the parsha of the zoleil v'sovei. The lethargy that is likely after a heavy fleishikeh meal is discussed in the Scientific Observer 11/07,"Studies have indicated that stretching of the small intestine induces sleepiness and a protein–fat loading of the stomach induces sleepiness," says biologist H. Craig Heller at Stanford University in Palo Alto, Calif., "and, more blood going to the gastrointestinal tract means less going elsewhere,"—for example, the brain or skeletal muscle.); The disapproval of financial profligacy is found in many places in Chazal. I once heard from Reb Moshe that while most Mitzvos are defined in detail, the mitzva of temperance, קדושים תהיו, is not. This is because פרושים תהיו in Starobin, Russian, is not the same as פרושים תהיו in New York City.
Here is a positive note about the healthfulness of meat,

What Chazal give in Pesachim, they take away in the Mishna/Gemara in Shekalim 12a and13b. Ben Achiyah was in charge of the Kohanic Infirmary in the Mikdash; For one thing, even in the winter the kohanim went barefoot on stone, wore thin linen, and were tovel in cold water right before work, and additionally, their eating habits predisposed them to illness - they ate fat meat, and they drank water (to avoid שתוי.). A doctor was paid from the Trumas Halishka to prescribe the wine that would cure them.
בן אחייה וכו': על ידי שהיו הכהנים מהלכין יחפים על הרצפה והיו אוכלין בשר ושותין מים היו באין לידי חולי המעים והוה ידע האי דין חמר טב למעייא והאי דין חמר סמם למעייא:
(Tangentially, my wife was puzzled by this. This was the specific Mitzva the Ribono shel Olam gave the Kohanim; it should give them health, not sickness!
One might add that it seems to contradict the principle of שומר מצוה לא ידע דבר רע, commonly referred to as שלוחי מצוה אינן ניזוקין.
Putting aside all the speculative and apologetic answers which unreasonably limit the application of שלוחי מצוה אינן ניזוקין, I saw that Rav Shteinman in his Ayeles Hashachar here brings from Reb Chaim V in Ruach Chaim (אבות פ"ג מ"ג ) that korbonos, (even the חלק הבעלים, because otherwise he could say that ויתד was for Yisroel who ate only Shelamim), eaten properly, are נבלע באיברים. ענין הקרבן היה כך כי על ידי האש אשר על המזבח שהוא מלמעלה סר הרע ונותר חלק הבעלים ומה שנהנין כולו טוב. וכן היה המן היורד מן השמים כולו טוב כי אין רע יורד מן השמים ולכן לא היה בו פסולת ונבלע באיברים. וכן בשר הקרבן נבלע כולו באיברים ואינו מוציא ממנו פסולת וכן מוכח מחכמינו זכרונם לברכה (יומא עה ע"ב) לחם אבירים כו' שנבלע באיברים ואלא מה אני מקיים ויתד תהיה לך על אזניך וגו' בדברים שהכנענים היו מוכרים להם. ולכאורה נהי דנימא דסבירא ליה להתנא בשר תאוה נאסר במדבר (חולין יז.) מכל מקום למה לא תירצו מבשר שלמים אלא ודאי דגם הוא נבלע באיברים:
Clearly, the kohanim who became ill were not eating the korbanos with the proper kavana of כהנים אוכלים ובעלים מתכפרים, but instead to satisfy their personal appetite. Korbonos that are not נבלע באיברים can be harmful to the extent that it is a מקום דשכיח היזקא. To say this about Kohanim is not unreasonable, as we see in the Gemara in Chulin 133 and elsewhere about הצנועים and הגרגרנים.
I happened to see the following about Rav Shteinman's attitude about eating:
ידוע כל אכילתו של מרן הגרי"ל שטיינמן זצ"ל " לשמה ולשם קיום הגוף גרידא, ולא לשם תענוגי העולם הזה. פעם התבטא בעצמו שאין לו שום עניין באוכל, ותמיד יש לו תחושת שובע, ואין לו מושג של אהבת מאכלים, פעם העידה אשת חבר לרבינו ע"ה שאצלו יותר קל לצום מאשר לאכול. כאשר נתן לו הרופא תרופה, וביקשו שלא לקחתו יחד עם שוקולד או עוגת שוקולד, רבינו השיב בפשטות שמעולם לא אכל שוקולד ולא עוגת שוקולד, ובהזדמנות אחרת אמר שלא זוכר פעם שאכל עוגה למעט אולי פעם אחת בפורים. כמה עשרות שנים לא שתה קפה, ואינו אוכל בשר ויין רק בשבתות וימים טובים, ברכת המזון לא היה מברך אלא רק בשבת כי בימות החול לא היה אוכל פת, וכשנאלץ להתחיל לאכול פת מחמת חולשתו חקר ביקש לעשות התרה, וטעמו ונימוקו עימו שאחר מות האדם יש חיבוט הקבר על כל סעודה שאינה של מצוה, נמצא דכמה שממעטים בגשמיות הוי מצוה)
Although Chazal say פותחים בדיחותא, I'm reversing the order here. I call it bedichusa, but I really think that for children of a certain age, it would be an educational and pleasant thing to do. It would be נעים וטעים. A grandson from New York is visiting us here in Chicago, and this is such a special treat that my wife wants to do whatever she possibly can for him. So the first night he was here, he consumed a volume of meat that I hitherto thought beyond human capacity. I told him that he should be aware of two things from this week's parsha, Parshas Beshalach.
First, I told him, as we mentioned above, Chazal tell us that פרשת המן teaches us that bread, as represented by the Mahn, should be eaten to satiation. But one should not eat meat לשובע.
The second lesson is that it is a special segula to eat ice cream in the week of Parshas Beshalach.
The passuk says
ותעל שכבת הטל והנה על פני המדבר דק מחספס דק ככפר על הארץ
Targum Onkelos says
וּסְלֵיקַת נָחֲתַת טַלָּא וְהָא עַל אַפֵּי מַדְבְּרָא דַּעְדַּק מְקֻלַּף דַּעְדַּק דְּגִיר כִּגְלִידָא עַל אַרְעָא׃
Similarly, Targum Yonasan,
וּסְלִיקוּ עֲנָנַיָא וְאָחִיתוּ מַנָּא עִילַוֵי אֲנָחוּת טַלָא וַהֲוַת עַל אַנְפֵּי מַדְבְּרָא דְקִיק מְסַרְגֵּל דְּקִיק כִּגְלִידָא עַל אַרְעָא:
We all know what גְלִידָה is. This being the case, it stands to reason that during the week of Parshas Beshalach, it is a mitzva of זכר למן to eat as much ice cream as you like.
If we eat Charoses zeicher לעץ התפוח or זכר לטיט in Mitzrayim, and cover the challos, Tos Pschm 100b dh שאין, how can anyone reasonably deny that there is an inyan to eat ice cream זכר למן??
